Hal's Frittata Sandwich

Ingredients
Egg Beaters1/2 cup
skim milk1 tbsp
red pepper, diced1 tbsp
ground black pepper1/4 tsp
tomato slices, diced2
onions, diced1 tbsp
Whole Wheat Bread4 slices
Directions
Step 1In a small bowl, lightly whisk Egg Beaters , milk, and ground pepper until foamy. Then add onions, tomatoes, red pepper pieces.
Step 2Pour beaten mixture into small non-stick frying pan. Cook over medium heat until almost set.
Step 3Lift the sides to allow uncooked portion to flow underneath. Cover with a lid; turn heat off and let stand 2-3 minutes until desired firmness.
Step 4Cut in half and place one piece on whole wheat toast. Makes 2 sandwiches.
