Frittata Sandwich Recipe
Hal's Frittata Sandwich

| Egg Beaters | 1/2 cup | 125 ml |
| skim milk | 1 tbsp | 15 ml |
| red pepper, diced | 1 tbsp | 15 ml |
| ground black pepper | 1/4 tsp | 1 ml |
| tomato slices, diced | 2 | 2 |
| onions, diced | 1 tbsp | 15 ml |
| Whole Wheat Bread | 4 slices | 4 slices |
| Directions | |
|---|---|
| Step 1 | In a small bowl, lightly whisk Egg Beaters , milk, and ground pepper until foamy. Then add onions, tomatoes, red pepper pieces. |
| Step 2 | Pour beaten mixture into small non-stick frying pan. Cook over medium heat until almost set. |
| Step 3 | Lift the sides to allow uncooked portion to flow underneath. Cover with a lid; turn heat off and let stand 2-3 minutes until desired firmness. |
| Step 4 | Cut in half and place one piece on whole wheat toast. Makes 2 sandwiches. |
